SCRAPED BEEF

 

     Cut a piece of tender steak ½ inch thick, lay it on a meat board and with a knife scrape off the soft part of the meat until nothing is left but the tough, stringy fiber.  Season this pulp with salt and pepper; make into flat round cakes ½ inch thick and broil 2 minutes.  Serve on rounds of buttered toast.  Good for convalescent.

 

 

RENNET CUSTARD OR SLIP

 

         1 pt. milk                                               1 T sugar

                                                      1 t  rennet

 

     Put into a glass pudding dish the milk, sugar and rennet.  Stir until the sugar is dissolved, cover and put in a warm place, (about 98° Fahr.)  When ‘set’ or solid, put in a cool place at once, as whey must not appear.  Serve in glass dishes.  Flavor with nutmeg, vanilla or any liked flavor.

 

 

FOR LOW SPIRITS

 

     Take a seed of resolution, 1 ounce, mix well with oil of conscience, 1 ounce.  Infuse this with a large spoonful of salts of patience.  Distill carefully a composing plant called “other’s woes”, which can be found in every part of the garden of life.  Gather a handful of the blossoms of hope, sweetened with the balm of prudence and 1 ounce seeds of true friendship.  Mix into pills.  One taken night and morning will effect a cure.  In gathering the seeds of true friendship, be careful, for there is a plant which closely resembles it called self-interest, a few seeds of which, mould and spoil the remedy.

 

 

PEACH FOAM

 

        1 c fresh peaches                                    ½ c powdered sugar  (scant)

                                                         1 egg white

 

     Peal very ripe and choice peaches, put into a mixing bowl, add sugar and white of egg, then beat with a fork for one half hour or until thick, perfectly smooth and creamy.

 

 

COFFEE CREAM

 

     ¼ box gelatine                                           ½ c sugar

     ¼ c cold water                                           1 ½ c sweet cream

     ½ c strong coffee                                           or1 ¼ c creamy milk

 

     Soak gelatine in water for ½ hr.  Poor [sic] on coffee boiling hot.  Add sugar and stir until dissolved.  Strain into granite pan, set in iced water to cool.  When cool add cream and stir evenly for about 10 minutes until thick but not hard, turn into a glass dish while soft and it will settle into a smooth mass, then place where cool until it is firm.

 

 

PINEAPPLE ICE

 

       1 qt. water                                               1 can pineapple

       1 lb. sugar                                               2 lemons  (juice)

 

     Boil water and sugar 5 minutes, then add pineapple and juice of lemons.  Cool, squeeze through a cloth and freeze.  Whites of eggs may be added before freezing.
